Colorful broad bean stew

Ingredients for 3 servings:

  • 1 gr. can/n beans (sharpened beans)
  • 8 medium-sized potatoes, peeled and diced
  • 5 m.-sized carrot(s), peeled and diced
  • 3 thick tomatoes, diced
  • 1 large red bell pepper(s), diced
  • 750 ml vegetable stock
  • 1 tsp pepper
  • 1 tbsp oregano
  • 1 medium-sized onion(s), diced
  • 1 package of Cabanossi

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Simmer the potato cubes, carrot cubes, and bell pepper cubes in the vegetable broth for about 12 minutes. You can add the spices at this time to allow the flavor to develop. Drain the broad beans and add them to the stew along with the Cabanossi. Add the diced onion and tomatoes and simmer for another 5 minutes. Arrange on plates and serve.
