Colorful mashed potatoes with chicken

Ingredients for 6 servings:

  • 500 g potatoes
  • 1 kg seasonal vegetables (zucchini, kohlrabi, broccoli, carrots)
  • 250 g chicken breast
  • 2 tbsp butter
  • ¼ liter apple juice
  • 4 tbsp rapeseed oil
  • possibly water if needed

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Cook the potatoes in their skins in a little water for about 20 minutes. Peel and press through a potato ricer. At the same time, wash the vegetables and, depending on the variety, peel and coarsely grate them. Wash the meat and cut into small cubes. Sauté the vegetables and meat in the butter until lightly browned, add the apple juice, and simmer over low heat for 15 minutes. Purée everything, adding water if necessary. Mix with the potato mash and oil. Portion out and freeze. Variation: Replace the chicken breast with boneless haddock fillet.
