Colorful muffins

Ingredients for 1 servings:

  • 100 g butter or margarine
  • 100 g flour
  • 100 g sugar
  • 2 eggs
  • 1 tsp baking powder
  • 1 pinch of salt
  • 1 packet of vanilla sugar
  • some food coloring, liquid, in three colors
  • 1 bag of white chocolate coating
  • possibly sweets (Smarties) or sugar flowers

In a bowl, combine the softened butter or margarine with the next six ingredients and beat with a whisk until light and fluffy (it’s best to mix the flour with the baking powder first and sift in). Divide the batter into three equal portions and color each with three different colors of food coloring. Layer the three different colored batters into the paper cups or a muffin tin and mix lightly with a toothpick (for a light marbling). Bake for about 15 minutes in a preheated oven at 180°C. Once cooled, cover the cakes with white chocolate coating. A pastry brush is best for this. You can of course use icing instead of chocolate coating. These small mini Smarties or the regular-sized ones are particularly suitable for decoration. Colorful sugar flowers also look beautiful on them.
