Ingredients for 2 servings:
- 200 g pasta (spaghetti)
- 1 bell pepper(s), yellow
- 2 m.-large tomato(s)
- ½ cucumber(s), green
- 1 bunch arugula
- Parsley
- dill
- salt and pepper
- 2 tbsp sour cream
- 1 tsp tomato paste
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Cook the spaghetti. Meanwhile, dice the bell peppers and tomatoes, grate the cucumber, and sprinkle with 1 teaspoon of salt. After about 5 minutes, drain the pickle water. Wash and finely chop the arugula, dill, and parsley, then chop with a mincing knife. In a bowl, mix the sour cream with the tomato paste and season with salt and pepper. Toss the cooked spaghetti in the cream. Then fold in the bell peppers, tomatoes, and cucumber. Season everything again with salt and pepper, and finally fold in the finely chopped greens.
