Ingredients for 2 servings:
- 150 g rice
- 1 cup sour cream, or 250 g yogurt
- 1 tbsp Balsamic vinegar, white
- 3 tbsp mustard
- 4 tbsp tomato paste
- Salt
- pepper
- 2 red bell peppers
- 2 apples
- 1 small onion(s)

Suitable for diets
Bring the rice to a boil and let it swell. Combine the cream or yogurt, mustard, tomato paste, balsamic vinegar, salt, and pepper. Dice the bell pepper, apple, and onion and add to the sauce. After cooking, rinse the rice with cold water, drain, and mix with the remaining ingredients. The salad tastes best when it’s been left to marinate, ideally overnight. A delicious and light salad that’s also great to take to work.
