Colorful salad with feta cheese

Ingredients for 4 servings:

  • 750 g tomatoes
  • 1 cucumber(s)
  • 1 bell pepper(s), red
  • 1 bell pepper(s), yellow
  • 1 bunch of spring onions
  • 250 g fresh Greek sheep’s cheese (alternatively packaged, e.g. Patros)
  • Extra virgin olive oil
  • Salt
  • Pepper, colorful

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash the spring onions (until they are light green), chop them finely, and add them to a salad bowl. Wash the tomatoes, quarter them, and add them. Wash the bell peppers, cut them into small pieces, and add them as well. Peel the cucumber, slice them (you can cut them a little thicker so the cucumber doesn’t get mushy too quickly), and add them to the bowl. Season to taste with salt and pepper and add as much olive oil as you like. Stir everything together and season to taste. Finally, cut the feta cheese into pieces and add it as well. Stir everything together again. Serve with flatbread or sesame rings.
