Colorful tomato and pepper salad

Ingredients for 3 servings:

  • 3 tomatoes
  • 1 bell pepper(s), yellow
  • 1 onion(s), red
  • 1 small sausage (Mettwurst)
  • 1 mozzarella
  • 3 tbsp olive oil, for the marinade
  • salt and pepper
  • 1 tsp mustard, medium hot
  • 2 tbsp balsamic vinegar

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Cut the tomatoes into eighths, slice the bell peppers into approximately 1 cm pieces, thinly slice the onion, and chop the mozzarella into small pieces. Halve the Mettwurst lengthwise and slice, then fry in a pan. Remove the Mettwurst from the pan and let it cool. Mix all ingredients together in a bowl. For the marinade, mix the olive oil, balsamic vinegar, and some of the cooking fat with the mustard, and season with salt and pepper. Pour over the ingredients and let it marinate. The marinade quantities can, of course, be adjusted to suit your taste, but the cooking fat should not be omitted. It gives the salad a special touch.
