Colorful vegetable gratin

Ingredients for 4 servings:

  • 400 g potatoes
  • 200 g kohlrabi
  • 200 g carrot(s)
  • 200 g spring onions
  • 200 g corn (can)
  • 200 g crème fraîche
  • 3 eggs
  • 50 g breadcrumbs
  • 50 g cheese (Emmental), grated
  • Salt
  • pepper
  • 1 bunch chives, chopped
  • 1 bunch parsley, chopped
  • Butter for the mold

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Wash, peel, and slice the vegetables. Peel the onions and slice them into rings. Grease a baking dish with butter and layer the vegetables alternately. Mix the crème fraîche with the eggs, season with salt and pepper, and mix with the chopped herbs. Spread the mixture over the vegetables and cover with aluminum foil. Bake in a preheated oven at 180°C – 200°C for approximately 40 minutes. Then remove the aluminum foil and top with breadcrumbs and cheese. Serve with tomato sauce.
