Ingredients for 4 servings:

  • 1 onion(s)
  • 250 g ham or cooked ham, diced
  • 300 g peas and carrots, frozen
  • 1 can of corn
  • 200 g processed cheese
  • 250 ml vegetable stock
  • 1 bunch of mixed herbs, chopped
  • salt and pepper
  • nutmeg
  • 200 g cheese, grated, e.g. Emmental
  • 500 g pasta (spiral), pre-cooked

Working time approx. 30 minutes; Total time approx. 30 minutes

Pasta casserole with vegetables, perfect for kids

Dice the onion and sauté with the ham cubes. Add the vegetables and toss briefly. Deglaze with broth and reduce the heat to medium. Cut the processed cheese into pieces and add it to the vegetables. Simmer gently until the cheese has dissolved. If you prefer a thick sauce, you can thicken it at this point. Season and add the herbs. Combine the vegetables and pasta in a casserole dish and sprinkle with cheese. Bake in the oven at 220°C for 20 minutes. You can change or add more vegetables if you like. I also like to add finely chopped bell peppers, zucchini, or kohlrabi. The main thing is that everything is chopped “confetti-sized” and nicely colored.
