Cookie cake with yogurt cream

Ingredients for 1 servings:

  • 200 g wholemeal butter biscuits
  • 500 g yogurt, stracciatella
  • 250 g cream
  • 8 sheets of white gelatin
  • 2 can/n mandarin orange(s), 314 ml content
  • 75 g chocolate shavings
  • 250 g cream

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Refrigerator cake

Soak the gelatin leaves. Whip the cream until stiff and stir into the yogurt. Squeeze the soaked gelatin leaves lightly and dissolve over low heat. Carefully blend into the yogurt cream and then stir in completely. Drain the mandarins. Set aside 12 nice slices for decoration, chop the remaining slices slightly smaller and fold into the yogurt cream. Line a loaf cake tin with foil. Pour in some of the yogurt cream, then a layer of wholemeal butter biscuits. Continue with the yogurt cream and biscuits until all is used up. The last layer should be biscuits. Let everything set in the refrigerator for 2-3 hours. Turn out of the tin onto a plate and remove the foil. Whip the cream for the decoration until stiff and spread a thin layer all over the cake. Transfer the remaining cream to a piping bag fitted with a star nozzle. Sprinkle the cake with the chocolate shavings. Pipe cream puffs and place the mandarin orange slices on the puffs. Of course you can also use other types of yogurt and other fruits
