Instructions

makes 10 pieces

First, prepare the muffins. Mix the first seven ingredients together and bake in a muffin tin at 180-200°C for 15-20 minutes. Let cool. Mix the marzipan mixture with the powdered sugar until smooth and form balls. Press the chocolate drops into the balls to create the “pupils.” It doesn’t have to be straight—think Cookie Monster. Color the desiccated coconut with the blue food coloring. It’s best to use a stainless steel bowl and diligently crush the lumps. Mix a glaze from the powdered sugar, water, and blue food coloring. Dip the muffins upside down into the glaze, then into the desiccated coconut and let dry. Use a little glaze to stick the marzipan eyes to the muffin, not quite straight. Cut the cookies in half, cut a mouth into the Cookie Monster, and then clamp the cookie in place.
