Cookies with dried fruit

Ingredients for 1 servings:

  • 200 g butter
  • 190 g brown sugar
  • 1 packet of vanilla sugar
  • 1 packet of pudding powder (vanilla flavor)
  • 2 eggs
  • 600 g flour
  • 1 packet of baking powder
  • 300 g mixed dried fruits (apricots, peaches, plums, raisins, dates)
  • 50 g almonds, chopped
  • 20 g ginger, candied
  • ½ tsp cinnamon
  • ½ tsp cardamom
  • 6 tbsp Cointreau
  • some orange peel

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 32 minutes

Finely chop the dried fruit and candied ginger. Place the butter, sugar, vanilla sugar, and pudding powder in a bowl and beat with a hand mixer for about 3 minutes until creamy. Mix in the eggs. Mix the flour with the baking powder, orange zest, and spices and gradually fold in (use a dough hook for best results). Add the Cointreau and mix into the batter. Now fold in the chopped almonds, dried fruit, and ginger. Preheat the oven to 200°C (190°C fan/convection oven). Line the baking sheets with baking paper. Using a teaspoon, scoop out small portions, shape them into balls, and place them on the paper. The cookies won’t spread much, so don’t leave too much space between them. Bake the cookies for about 10-12 minutes (time varies depending on the oven).
