Cookies with lemon and olive oil

Ingredients for 4 servings:

  • 2 lemons, untreated
  • 150 g flour
  • ½ tsp baking powder
  • 75 g sugar
  • 1 pinch of salt
  • 75 ml olive oil, mild
  • 2 tbsp milk
  • Powdered sugar for dusting

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 32 minutes

Wash the lemons in hot water and finely grate the zest. Juice half a lemon. Mix the flour, baking powder, sugar, and salt in a bowl. Add the lemon zest, lemon juice, olive oil, and milk. Mix with the dough hook of a food processor and then knead with your hands until a smooth dough forms. Preheat the oven to 160°C (fan/convection oven) and line a baking tray with baking paper. Roll the dough into approximately 20 balls, place them on the tray, and flatten slightly. Bake for approximately 12 minutes. Let cool on a wire rack. Dust with powdered sugar.
