How to cook the chicory

You can prepare chicory in different ways. To cook it, you should first clean the vegetables and remove the stalk. Then separate the individual sheets from each other so that they are through faster.

  • Put water in a saucepan and bring it to a boil. Then add a teaspoon of salt.
  • Now throw the individual chicory leaves into the boiling water and let them cook for five minutes over medium heat.
  • Finally, drain the water and then rinse the leaves with cold water. This stops the cooking process and keeps the leaves from overcooking.
  • You can then refine the leaves with olive oil, herbs, and sea salt if you do not want to process them further.
  • Please note, however, that many of the healthy ingredients in chicory can be lost during cooking due to thermal processing.
  • If you do not want to lose the vitamins, you can steam the vegetables. This type of preparation is gentler.

How to use cooked chicory leaves

You can eat cooked chicory leaves as described above, for example, by refining them with spices and oil. But there is more to it than that.

  • For example, try steamed chicory with ham and cheese. The preparation takes little time and still tastes particularly good.
  • Cooked chicory with a layer of fried onions and jacket potatoes as a side dish not only tastes great but is also healthy.
  • An equally simple dish, for example, is a chicory and potato casserole that you gratinate with cheese.
