Yeast flakes, cashew nuts, almond butter – the basics of vegan cheese alternatives
The basics among the vegan cheese alternatives are yeast flakes, cashew nuts, and almond butter:
- Yeast flakes have a spicy taste reminiscent of cheese. They are used in many recipes, for example for vegan pizza melt.
- Cashew nuts have a mild, nutty taste and, thanks to their short soaking time of two hours, can quickly be processed into spreadable cheese alternatives.
- If you don’t have time, you can use almond butter as a substitute for cheese, for example, to gratinate a casserole.
Recipe: Vegan Cashew Parmesan
For cashew parmesan, you need 200 grams of cashew nuts, three to four tablespoons of yeast flakes, and salt.
- Roast the cashew nuts in a pan without oil. Be careful not to burn them.
- Then crush the seeds in a blender to the desired consistency.
- Place the ground kernels in a bowl and mix in the yeast flakes and salt to taste.
- Fill the vegan parmesan into a well-closable box. It will keep in the fridge for at least a week.
Recipe: Vegan cream cheese
To make vegan cream cheese, you need 500 milliliters of unsweetened natural soy milk, the juice of half a lemon, a pinch of salt, and any spices you like (e.g. garlic, wild garlic, paprika, chili, pepper). Furthermore, a clean tea towel, a pot, and a sieve are used in the production:
- Briefly boil the soy milk and add the lemon juice while stirring. The milk should curdle.
- Boil the milk again, stir and set the pot aside to allow the thickened mass to cool (about 15-20 minutes).
- Strain the mixture with the tea towel. Alternatively, you can use a muslin diaper.
- Add the spices of your choice. For an even cheesier taste, add yeast flakes. Your vegan cheese substitute is now ready to eat.
Recipe: Vegan casserole and pizza melt
If you would like to bake a vegan casserole or pizza, you need about four tablespoons of margarine, five to six teaspoons of flour, 250 milliliters of water or plant/nut milk, eight tablespoons of yeast flakes, a tablespoon of mustard, garlic powder, salt, and pepper.
- Melt the margarine in a pan or saucepan.
- Add the flour to the melted margarine and mix everything together.
- Next, add the water or milk and yeast flakes. Stir vigorously with a whisk.
- Finally, add the spices and mustard.
- Spread the mixture on the pizza or put it over the casserole to gratinate.
