Cooking pear compote with elderberry

Ingredients for 2 servings:

  • 3 large cooking bulbs
  • 100 ml water
  • 50 ml elderberry juice
  • 1 tbsp honey or agave syrup
  • 2 pinches of cinnamon powder

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 30 minutes

Peel the cooking pears. Remove the cores and dice the pears into small cubes. Place them in a small saucepan with water and elderberry juice (or apple juice). The pears should not be completely covered. Bring to a boil and simmer with the lid on for 10 minutes. Then add the honey and cinnamon, stir well, and simmer for another 15 minutes. Leave uncovered for the last 5 minutes so the compote can thicken slightly. Stir occasionally. At the end, puree, mash, or leave in chunks as desired. Enjoy hot, lukewarm, or cold. The compote tastes excellent with rice pudding, vanilla pudding, with a dollop of cream, with hot waffles, with vanilla ice cream, or just on its own. If you like, you can also stir in slivered almonds or raisins soaked in elderberry juice.
