Corn surimi salad

Ingredients for 4 servings:

  • 300 g surimi sticks, frozen
  • 1 can corn kernels or a little less, to taste
  • 4 eggs, hard-boiled
  • 1 small onion(s)
  • 4 tbsp mayonnaise
  • salt and pepper
  • some dill, fresh

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

simple and fast

Remove the surimi from the foil, cut it into approximately 1 cm pieces while it’s still half-frozen, and place it in a bowl. Add the drained corn to the bowl. Peel the eggs, dice them finely, and mix in. Peel the onion, dice it very finely, and initially add only about 1 tablespoon. Stir in the mayonnaise and mix everything with salt, pepper, and freshly chopped dill. Season to taste, adding more spices or onions if desired. It tastes great right away or even after refrigerating it overnight.
