Ingredients for 2 servings:
- 1 can of corned beef
- 250 g tomatoes
- 10 eggs
- some salt and pepper
- some olive oil
- some herbs, Italian
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 25 minutes
Wash and quarter the tomatoes. Add the canned corned beef to a pan with a little oil and heat slowly over medium heat until the meat forms a mixture. Add the herb mixture and spices and mix thoroughly. Add the tomatoes to the pan and sauté for 10 minutes over medium heat. Add the eggs and stir until set. Season to taste and add more spices if desired. This dish goes well with bread.
