- 50 g broth, cold

- 1 tsp paprika powder, smoked, mild (optional)
- 1 tsp smoked salt (optional)

Mix the gluten flour, oil, broth, and spices and knead well (dissolve the spices in the broth first). Then form the dough into a very thin flatbread by pressing, stretching, and smoothing it. Because the dough is tough and tends to shrink, place it between two flat plates and press them together firmly. Microwave the whole thing on the lowest setting for 8 minutes. (This information is based on a 900-watt microwave with 3 settings; the time or setting may vary for other appliances.) When the seitan flatbread is ready, it will be thin and chewy. Cut it into small “bacon” squares and add them to the final dish. This will make it softer while retaining its stability. If a dish consists primarily of soft ingredients, it will have more crunch and a higher protein content. You can make the pieces in advance and store them in a jar. This suggestion is great for adding a little crunch to vegan dishes, as if you were biting into bacon bits. It goes well with risotto, vegetable stir-fries, soup, etc.
