Cottage Cheese Ice Cream "Strawberry Cheesecake"

Ingredients for 4 servings:

  • 400 ml cottage cheese
  • 200 g strawberries, frozen
  • 1 packet of vanilla powder or equivalent vanilla flavor
  • 2 tbsp honey or equivalent sweetener
  • 1 tbsp invert sugar, optional
  • 1 tbsp vodka, optional

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

light and protein-rich

Combine all ingredients in a tall mixing bowl and blend with an immersion blender until creamy. Season to taste and add a little honey if desired. Enjoy the ice cream immediately or freeze it and let it thaw 15 minutes before serving. Serve with strawberry sauce or whipped cream, for example. Invert sugar and alcohol are optional, but they help prevent the formation of large ice crystals and keep the ice cream creamier. You can also use other berries or fruits and other alcohols (e.g., mango, cherries, or raspberries with rum, kirsch, or cachaça) and replace the honey with another sweetener, such as agave syrup or artificial sweetener. In principle, any flavor that works with cheesecake will work, including without any fruit and instead with caramel, peanut butter, or maple syrup. You can even mix in nuts or chocolate chips at the end!
