Ingredients for 2 servings:
- 200 g cottage cheese
- 1 garlic clove(s)
- 1 small onion(s)
- 1 large bell pepper(s), yellow
- 1 m.-sized tomato(s)
- 1 small can of olives, black
- n. B. salt and pepper, black
- 1 tbsp rapeseed oil or sunflower oil
- 1 tbsp balsamic vinegar
- 1 tsp, stratified xylitol (sugar substitute), if desired

Place the cottage cheese in a bowl. Finely chop the garlic and onion and add it. Cut the bell pepper into strips, then into small pieces. Cut the tomato into eighths, removing the stem, and then halve each eighth. Add everything to the cottage cheese. Drain the olives and add them as well. Mix together the vinegar, oil, salt, and pepper, and season with a little xylitol. Transfer to the bowl and mix everything well.
