Ingredients for 4 servings:
- 300 g flour (whole wheat flour)
- 300 g flour (wheat flour type 550)
- 400 g flour (rye flour type 1150)
- 600 ml water, lukewarm
- 1 cube of yeast
- 2 tsp bread spice mix
- 4 tbsp oil
- 4 tsp salt
- 2 tsp sugar
Instructions
Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes
Mix the yeast, sugar, wheat flour, and water to form a soft pre-dough. Let the dough rise for 30 minutes. Then add the remaining ingredients and knead everything into a dough. Let the dough rise for 1 hour and knead again. Then shape it into a round loaf and dust with rye flour. Place it on a greased baking sheet and let it rise in the oven at 50°C for 30 minutes, until it has significantly increased in size. Bake at 210°C for about 1 hour.
