Ingredients for 4 servings:
- 6 quince(s)
- 500 g mascarpone
- some sugar
- ½ lemon(s)
- some liqueur (e.g. Maraschino) or quince brandy
- 3 tbsp milk
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Peel the quinces, remove the core, and dice the fruit. Sauté with a little water and sugar until soft. Then remove the quince pieces from the juice and let cool. Mix together the mascarpone, milk, squeezed lemon juice, and sugar. Fill small ramekins (cups will do) two-thirds full with the cold quince pieces. Add a small dash of liqueur to each side. Fill the ramekins to the brim with the mascarpone cream. Bake for about 5 minutes at high top heat or using the grill function, until the top develops a nice brown color. Chill. Serve cold.
