Couscous pan with peppers, tomatoes and feta

Ingredients for 2 servings:

  • 200 g couscous
  • some oil
  • some butter
  • 1 can tomatoes, peeled, 400 g
  • 1 can corn, 285 g drained weight
  • 1 bell pepper(s)
  • 200 g shepherd’s cheese or feta cheese
  • some chili sauce
  • salt and pepper
  • Paprika powder
  • Herbs

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

fast, slightly spicy

Cook the couscous according to the package instructions. Heat a little oil and butter in a pan and add the cooked couscous along with the drained corn and diced bell pepper. Brown lightly and season with salt, pepper, paprika and a little chili sauce. Add the peeled tomatoes. Chop the tomatoes into bite-sized pieces using a spatula. Turn off the heat, keep the pan on the heat, and stir in the herbs and diced feta cheese, letting them melt slightly. Enough as a pan meal for 2 people or as a side dish with schnitzel, for example, for 3 people. Tip: To serve it as shown in my picture, pour the mixture into a coffee mug, hold the plate on top, quickly turn the mug over and gently tap or shake the mug to loosen it. Then garnish with the chili sauce and herbs.
