Couscous with apple and carrot

Ingredients for 3 servings:

  • 300 g couscous
  • 300 ml salt water
  • 300 g carrot(s)
  • 1 large apple
  • 1 garlic clove(s)
  • some mint
  • some sesame, black
  • n. B. almond(s)
  • e.g. salt and pepper
  • n. B. Curry
  • e.g. lemon juice
  • olive oil
  • possibly chili

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

as a side dish when grilling

Prepare the couscous according to the package instructions in salted water. In the meantime, peel and coarsely grate the carrots, and peel and finely chop the garlic. Heat a pan with olive oil and briefly sauté the carrots with the garlic, curry, salt, and pepper. The carrots should still have some bite! Season the couscous with lemon, salt, pepper, and perhaps a little chili, and add a little more olive oil. Thinly slice the apple with the skin and add it to the couscous. Toast some black sesame seeds in the pan without fat, then briefly toast the chopped almonds. Serve the couscous in a bowl with the sesame seeds, almonds, and mint.
