Couscous with dried apricots

Ingredients for 4 servings:

  • 400 g couscous, instant
  • 1,000 g whole milk yogurt
  • 250 g apricot(s), dried
  • Cinnamon powder
  • Sugar

Instructions

Working time approx. 15 minutes; Rest time approx. 5 minutes; Total time approx. 20 minutes

Soak the couscous according to the package instructions. Pour hot water over the apricots in a bowl, cool after 5 minutes, and cut into small cubes. Pour the yogurt into a bowl and stir in the diced apricots. Add sugar to taste, if desired. Place the couscous in a deep plate or shallow bowl, make a well in the center, and fill with the yogurt mixture. Sprinkle with cinnamon and sugar, if desired. Dates or dried figs can be used instead of apricots. Dates must be pitted, but do not soak in water. The couscous can also be mixed with the yogurt mixture and chilled. This creates a dessert that is usually eaten from glasses or cups, like yogurt.
