Couscous with vegetables

Ingredients for 4 servings:

  • 200 g carrot(s)
  • 200 g kohlrabi
  • 40 g butter
  • 400 ml vegetable stock
  • 200 g peas
  • 200 g couscous
  • Salt
  • 2 tbsp herbs, any, freshly chopped

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cut the carrots and kohlrabi into 2-3 mm thin sticks. Briefly sauté the vegetables in butter. Add the broth and cook, covered, for about 3 minutes. Stir in the peas and couscous. Simmer over very low heat for 8-10 minutes, stirring occasionally. Fluff the couscous with two forks and season with salt. Sprinkle with the herbs.
