Ingredients for 1 servings:
- 300 g flour
- 2 tsp, leveled baking powder
- 150 g butter
- 200 g sugar
- 1 bag of vanilla sugar
- 1 egg(s)
- 1 pinch of salt
- 50 g raisins
- 2 kg apples
- 1 tsp cinnamon
- 125 g powdered sugar
- 2 tbsp lemon juice
Instructions
Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 30 minutes; Total time approx. 2 hours
Mix the flour with the baking powder and knead into a smooth dough with butter, 100g sugar, vanilla sugar, egg, and salt. Cover the dough and chill for 30 minutes. Wash and drain the raisins. Peel, core, quarter, and small pieces of the apples. Sauté the apples with 3 tablespoons of water, 100g sugar, raisins, and cinnamon for about 10 minutes, then let cool. Grease a springform pan. Roll out half of the dough and place it in the springform pan. Press the edges of the base up firmly, pierce several times with a fork, and bake in a preheated oven at 200°C (top/bottom heat) for 15-20 minutes. Spread the apple compote on the base. Roll out the remaining dough and place it on top. Bake at the same temperature for another 15 minutes. Then remove the cake and let it cool in the pan. Mix powdered sugar with lemon juice and cover the cake with the icing.
