Ingredients for 6 servings:

  • 300 g raw ham
  • 1 bell pepper(s), red
  • 1 onion(s)
  • 100 g leek
  • 12 eggs
  • 1 tbsp BBQ sauce
  • 6 potatoes, boiled
  • 1 bunch of parsley
  • 3 tomatoes
  • oil

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 10 minutes

Finely dice the bell peppers, onion, and leek. Preheat a large grill-safe pan and fry the diced vegetables in a little oil. Remove and set aside. Halve the tomatoes, season the cut sides with a little salt, and fry them in the pan. Remove and set aside. Clean the pan and let it cool. Then brush with a little oil and arrange the ham slices in the pan until the bottom and sides are covered. Brush the ham with the BBQ sauce and spread the vegetable mixture on top. Place the tomatoes on top. Halve the potatoes and place them on top. Season everything with salt and pepper and sprinkle with the finely chopped parsley. Finally, crack the eggs over the top. Place the pan on the grill or in an oven preheated to 220°C and let the eggs set.
