Ingredients for 1 servings:

  • 3 m.-sized eggs
  • 2 tbsp cream
  • 4 cherry tomatoes
  • 30 g salami, Italian, in one piece
  • 30 g mozzarella
  • 1 tbsp butter
  • Salt
  • pepper
  • possibly oregano

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Omelette Pizza Style

Wash the cherry tomatoes and pat dry, skin the salami. Thinly slice the tomatoes and salami, tear the mozzarella into pieces or slice it as well. Whisk the eggs and cream in a bowl and season with salt and pepper. Heat the butter in a nonstick pan, add the egg and cream mixture, let it set briefly, then top with the tomatoes, salami, and mozzarella like a pizza. Sprinkle with a little oregano, if desired. Cover the pan and cook over medium heat for about 4-5 minutes. The “pizza” is ready when the egg mixture has set, the cheese is nicely melted, and the edges are lightly browned. Slide it onto a plate, cut into pizza slices, and serve. It’s also perfect for lunch or dinner; a salad would be a good side dish.
