Crayfish salad with apple, mango and peppers

Ingredients for 4 servings:

  • 200 g crayfish
  • 1 apple, slightly sour, e.g. Elstar or Wellant
  • 1 bell pepper(s), red
  • 1 mango(s)
  • 50 g Brazil nuts, walnuts or almonds, ground
  • 10 basil leaves, fresh
  • 2 tbsp lime juice or lemon juice, preferably freshly squeezed
  • 1 tbsp salad cream (Miracel Whip) or mayonnaise
  • 2 tbsp yogurt
  • e.g. salt and pepper
  • possibly chili pepper(s), fresh, if you like
  • 50 g Parmesan, sliced

simple and fast

Chop the nuts or almonds into small pieces, peel the apple, bell pepper, and mango, and cut them into small pieces. Combine these ingredients in a large bowl, add the crayfish, yogurt, lime juice, Miracle Whip, and finely chopped basil leaves, season with pepper and a little salt, and mix well. Sprinkle the Parmesan cheese on the plates first, as it will otherwise soften. This crayfish salad is always delicious in different variations, as a starter or as a main course salad. It’s very refreshing and not just suitable for summer.
