Cream and quark cake “Rudi”

Ingredients for 1 servings:

  • 1 liter of whipped cream
  • 150 g sugar
  • 1 packet of vanilla sugar, approx. 8 g
  • 500 g quark, 40%
  • 4 cl Amaretto
  • 4 cl water
  • 4 sheets of gelatin
  • 1 cake base
  • Pineapple, chocolates… for decoration

Instructions

Working time approx. 45 minutes; Rest time approx. 6 hours; Total time approx. 6 hours 45 minutes

Cut the cake base in half. Soak the gelatine as directed. Mix the quark, sugar, vanilla sugar, 2 shot glasses of Amaretto, and 2 shot glasses of water by hand. Warm the gelatine slightly until liquid. Stir the liquid gelatine into the quark mixture, all by hand and not with a mixer. Whip 500ml of cream in a mixer until stiff peaks, then fold into the mixture. Pipe additional Amaretto onto the cake layers. Place a cake ring around the bottom layer. Spread the cream between the layers and spread the remainder over the top layer. Chill the cake for at least 6 hours. Then loosen the ring with a warm knife. Decorate the top of the cake with 500ml of whipped cream and garnish with, for example, pineapple or pralines. Tips: Pineapple can be replaced with other fruit. Some of the fruit can also be added to the mixture. The fruit can also be omitted. The Amaretto and water can be replaced with other liqueur/fruit juice or canned juice.
