Cream apple cake with butter crumble

Ingredients for 1 servings:

  • 1 ½ kg apples
  • 3 tbsp lemon juice
  • 750 g flour
  • 500 g sugar
  • 1 pinch of salt
  • 3 egg yolks
  • 5 eggs
  • 450 g butter
  • 600 g cream
  • 2 tbsp vanilla sugar
  • Powdered sugar for dusting
  • Grease for the tray
  • Flour for the baking sheet

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Grease a roasting pan and dust with flour. Peel, quarter, core, and slice the apples lengthwise. Immediately drizzle with lemon juice. Mix the flour with 375g of sugar and salt. Add 3 egg yolks and butter (cut into flakes). First, using the dough hook of a hand mixer and then briefly with your hands, mix into crumbles. Spread about 2/3 of the crumble on the bottom of the roasting pan and press down to form the base. Place the apple slices close together on top. Now beat the cream with 5 eggs, 125g sugar, and 1 tbsp vanilla sugar for about 1 minute until frothy and pour over the apples. Spread the rest of the crumble on top. Bake in a preheated oven (electric oven: 200°C, fan oven: 175°C) for about 50 minutes. Dust with powdered sugar. Whipped cream is delicious with this.
