Ingredients for 24 servings:

  • 400 g flour
  • 250 g butter, soft
  • 200 g cream cheese
  • 2 eggs, including the yolk
  • 250 g almonds, ground or hazelnuts
  • 200 g sugar
  • 3 tsp sweet cream
  • 2 eggs, of which the egg white
  • Powdered sugar, for dusting

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Knead all dough ingredients together until smooth and chill. In the meantime, prepare the filling. Mix the ground hazelnuts with the sugar and cream. Beat the egg whites until stiff peaks form and fold in. Now roll out the dough on a floured surface, cut into triangles, spread with the filling, and roll into croissants. Bake in a preheated oven at 180°C (160°C fan-assisted oven) for about 30 minutes. After baking and cooling, dust the croissants with powdered sugar.
