Ingredients for 1 servings:

  • 6 eggs, separated
  • 200 g sugar
  • ½ tsp butter-vanilla flavoring powder (or 1 packet of vanilla sugar)
  • 100 g flour
  • 200 g ground walnuts
  • 2 tsp baking powder
  • 200 g butter, melted
  • 200 g cream cheese
  • 50 g dark chocolate or couverture
  • Walnuts, for garnishing

Grease a cake pan (springform pan, bundt cake pan, etc.) and chill. Beat the egg whites with a pinch of salt until stiff peaks form. Gradually add 50g of sugar and continue beating until stiff peaks form. Place the egg whites in the refrigerator. Meanwhile, preheat the oven to 190°C (top/bottom heat). Briefly beat the egg yolks, then add the remaining sugar and beat until thick and creamy. Then add the flavoring, flour, nuts, and baking powder, and stir in with the cream cheese and melted butter. Finally, fold in the egg whites and pour the batter into the prepared pan. Bake in the preheated oven for 30-45 minutes, depending on the pan (springform pan 30-35, bundt cake pan or similar approximately 45). Allow to cool in the pan before turning out/removing the cake from the pan and garnishing with the chocolate and walnut halves.
