Cream of broccoli soup

Ingredients for 4 servings:

  • 300 g broccoli
  • Oil for frying
  • 1 small onion(s)
  • 1 liter vegetable broth
  • salt and pepper
  • 100 g cream cheese or crème fraîche
  • Cornstarch, optional
  • some cream

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

simple, quick and delicious

Roughly chop the onion and sauté it in a little oil until translucent. Since the soup will be pureed later anyway, it’s sufficient to just chop it roughly. Then add the chopped broccoli and the broth and simmer with the lid on for 15 minutes. Once the broccoli is soft, add the cream cheese. Remove the pot from the heat, puree the soup, and season with salt and pepper. If you prefer a thicker soup, you can thicken it with a little cornstarch mixed with water or cream. Serve garnished with a little cream and coarsely ground pepper.
