Ingredients for 4 servings:
- 2 onions
- 60 g butter
- 2 cloves garlic, crushed
- 500 g mushrooms, small, sliced
- 30 g flour
- 560 ml milk
- 375 ml beef broth
- 6 tbsp parsley, freshly chopped
- Sour cream
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Finely chop the onions. Melt the butter in a large saucepan. Add the onions and garlic. Heat over medium heat for 3 minutes, stirring. Add the mushrooms and simmer for 5 minutes, stirring continuously. Add the flour and stir for another minute. Add the milk and broth to the pan and mix well. Bring to a boil. Reduce heat and simmer uncovered for 15 minutes, until the soup thickens. Stir in the parsley. Serve garnished with a spoonful of sour cream.
