Ingredients for 8 servings:

  • 2 cups of light cream
  • 2 cups Cremefine (for whipping)
  • 50 g sugar
  • 400 g fruit (raspberries, strawberries or forest fruits…)
  • 3 tbsp sugar
  • 1 tsp cinnamon

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

Delicious and light cream with red fruits and a cinnamon-sugar layer

Stir the crème légère with the sugar until smooth. (You can vary whether you prefer it a little sweeter or not, but the fruit is often a bit tart, so I always make the cream nice and sweet.) Whip the Cremefine until stiff peaks form and carefully fold it into the sweetened cream. Then puree half of the fruit and mix it with the other half. (This simply creates the perfect ratio of pieces to fruit puree.) Finally, pour the fruit mousse into several small dessert bowls or a large, wide bowl, cover with the cream, and refrigerate for about 1 hour. The cream will seem very runny when poured in, but will firm up once the Cremefine is folded in and let it rest for a while in the refrigerator. Sprinkle with a cinnamon-sugar mixture before serving. If you like, you can also replace the cinnamon-sugar mixture with crushed Oreos.
