Creamed spinach with fennel greens

Ingredients for 4 servings:

  • 450 g spinach, frozen
  • 1 large garlic clove(s)
  • 1 handful of fennel (fennel greens)
  • 1 tsp, leveled vegetable broth, instant
  • salt and pepper
  • Nutmeg, freshly grated
  • some clarified butter
  • Water
  • 1 cup of cream

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Finely chop the garlic and fry it in clarified butter. Add a little water, stir in the vegetable stock, and let it reduce slightly. Add the spinach and finely chopped fennel leaves and sauté until the spinach is tender. Season with salt, pepper, and nutmeg. Stir in the cream, season to taste, and serve. Serve with mashed potatoes and a fried egg.
