Creamed strips 'Hubertus style'

Ingredients for 4 servings:

  • 600 g lean pork, cut into strips
  • 1 tbsp clarified butter
  • 3 m.-sized onion(s), cut into rings
  • 1 garlic clove(s), crushed
  • 1 tsp flour, sifted
  • 300 ml vegetable stock
  • salt and pepper
  • 1 can of mushrooms
  • 100 ml crème fraîche

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Brown the pork, cut into strips, in hot clarified butter. Add the onion rings and crushed garlic and sauté. Sprinkle a teaspoon of sifted flour over the pork to brown the onions. Deglaze with the vegetable stock and season with salt and pepper. Simmer for about 15 minutes. Thicken with a little flour. Add the mushrooms, or other mushrooms such as chanterelles, to the meat and heat through. Stir in the crème fraîche before serving. Season to taste, if desired. I serve it with rice or hash browns and salad.
