Creamy corn puree

Ingredients for 4 servings:

  • 4 corn cobs
  • Salt
  • 1 tbsp butter
  • chili flakes
  • Parsley

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Simmer the corn cobs, without leaves, in a large pot of boiling salted water for 15 minutes. Remove, drain, and be sure to reserve the cooking water. Use a knife to cut the kernels along the length of the cob. This is easiest if the cobs are placed vertically. Place in a bowl and puree with 1 tablespoon of butter, a generous amount of salt, and a few tablespoons of the cooking water until smooth. Add more water if necessary. Mix in a little chili, to taste, and parsley. The puree goes very well with simple meat dishes and is therefore also ideal as a side dish for barbecues.
