Creamy lemon chicken from the slow cooker

Ingredients for 4 servings:

  • 1 kg chicken breast
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 onion(s)
  • 3 cloves garlic
  • 2 tsp, heaped herbs, Italian
  • 1 tsp salt
  • 1 tsp pepper
  • 400 ml chicken broth
  • 1 tsp mustard, grainy
  • 300 ml cream
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 6 hours; Total time approx. 6 hours 15 minutes

Trim the chicken and then season each side with pepper, salt, and Italian herbs. In a large skillet over medium heat, melt the butter and olive oil. Add the onion and garlic and sauté for 2 minutes, until translucent and lightly browned. Add the onions and garlic from the skillet to the slow cooker and place the chicken in the skillet. Sauté for about 3 minutes on each side, until nicely browned. Add the chicken to the slow cooker and add the chicken broth. Cook the chicken in the slow cooker for 5-6 hours on Low or 3-4 hours on High. Remove the chicken from the slow cooker and keep warm. In a saucepan, combine the sauce from the slow cooker and add the cream, mustard, and lemon juice. Continue simmering with the cornstarch until the sauce reaches the desired consistency. Season to taste with salt and pepper.
