Creamy salsify with cooked ham

Ingredients for 4 servings:

  • 1 kg salsify(s), from the jar
  • 100 ml vegetable stock
  • 200 ml cream
  • 100 ml milk
  • 1 tbsp lemon zest, freshly grated
  • 250 g cooked ham
  • 1 bunch of parsley
  • Sauce thickener, light
  • salt and pepper
  • nutmeg

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Drain the salsify in a sieve and let it drain. Bring the vegetable stock with the cream and milk to a boil, then season with grated lemon zest, salt, pepper, and nutmeg. Cook the salsify in the sauce for about 10 minutes. Add a light sauce thickener until the sauce reaches the desired consistency. Season again to taste, if desired. Finely dice the cooked ham and stir it into the sauce. Sprinkle with washed and chopped parsley and serve. Boiled potatoes are delicious with this dish.
