Ingredients for 2 servings:

  • 1 tbsp sugar
  • 200 ml orange juice
  • 1 orange(s)
  • 4 crêpes or pancakes (refrigerated)
  • 2 cl Cointreau
  • 1 pomegranate

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Halve the pomegranate and remove the seeds. Peel, slice, and segment the orange. Caramelize the sugar in a non-stick, not too small pan. Then deglaze with the orange juice. Place the first crêpe in the pan. After about 1 minute, cover with 1 or 2 orange segments and fold them in half, then after another minute, fold them into quarters. Now gradually add the other crepes and repeat until you have 4 quarters. Add more orange juice as needed. Then pour the orange liqueur over them. Now, if you like (and are brave enough), you can flambé the whole thing. Then arrange 2 crêpes on each plate. Pour the orange sauce and pomegranate seeds over them and serve.
