Crêpes with apple compote

Ingredients for 2 servings:

  • 200 g flour
  • 3 eggs
  • 400 ml milk
  • 1 pinch of salt
  • Sugar
  • 300 g apples, peeled and pitted
  • 20 g raisins
  • Cinnamon
  • oil

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Whisk the flour, eggs, and milk together to form a thin batter and add a pinch of salt. If you like it sweet, add a little sugar. Let the batter rest for about 20-30 minutes. Heat a little oil in a pan and fry the crêpes. If you have a non-stick pan, you don’t need any oil at all. I got 12 small crêpes (15 cm in diameter) from the amount of batter specified above. This is perfectly sufficient for 2 people. If the crêpes are being served as a dessert, this amount will also serve 4 people. Peel, core, and dice the apples. Put a little water in a saucepan, add the diced apples, raisins, cinnamon, and sugar. Simmer everything until the apples are soft and you have a mixture of puree and apple pieces. Spoon the puree onto the crêpes, roll them up, and enjoy. Calories (prepared with 3.5% milk and a total of 50 g of sugar): approx. 140 kcal / crêpe approx. 840 kcal / portion (6 crêpes).
