Crêpes with banana curd

Ingredients for 4 servings:

  • 2 eggs
  • ¼ liter of milk
  • 100 g flour
  • 1 pinch of baking powder
  • 1 ½ tbsp sugar
  • 1 pinch of salt
  • 2 tbsp carbonated mineral water
  • 1 tbsp margarine
  • 400 g low-fat curd cheese
  • 1 packet of vanilla sugar
  • 1 large banana(s)
  • 1 tbsp lemon juice

Instructions

Working time approx. 45 minutes; Rest time approx. 15 minutes; Total time approx. 1 hour

Low-fat – only 22.5% fat (280 kcal / 7 g fat)

Mix the eggs, milk, flour, baking powder, 1 teaspoon of sugar, and salt into a smooth batter. Let stand for about 15 minutes. Stir in the mineral water. Heat the fat in batches in a small, non-stick pan. From the batter, bake 8 thin crêpes one after the other until golden brown and keep warm. Mix the quark with 1 tablespoon of sugar and the vanilla sugar. Peel and finely dice the banana, immediately drizzle with lemon juice, and then fold into the quark. Fill the crêpes with the batter and roll up.
