Crispy chicken from the seat

Ingredients for 1 servings:

  • 1 chicken, fresh, approx. 1.2 kg
  • 4 tbsp olive oil
  • 2 tbsp paprika powder
  • 1 tbsp salt
  • e.g. cayenne pepper
  • e.g. cumin
  • 1 m.-sized onion(s)
  • 1 cup water

Working time approx. 10 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 55 minutes

Preheat the oven to 200°C fan/convection oven. Make a spicy marinade from the spices and oil. Add more or less cayenne pepper to taste. Peel and quarter the onion. Wash the chicken thoroughly and dry it with kitchen paper. Brush with the marinade, or massage it in by hand if you prefer. Stuff the quartered onion into the chicken. Carefully place the chicken on the chicken breast, making sure the onion doesn’t fall out (it’s best to close the opening in the chicken breast with roulade pins to prevent the onion from falling out during cooking). Place the chicken breast on a drip tray or in a casserole dish and pour a cup of water into the dish. Place in the preheated oven and cook for about 45 minutes. Remove from the oven, carve, and serve.
