Ingredients for 2 servings:
- 1 ½ kg pork knuckle(s)
- 2 onions, peeled and halved
- 5 cloves garlic, peeled and halved
- 1 carnation(s)
- 5 bay leaves
- 1 tsp juniper berries
- ½ tsp caraway seeds
- 2 tsp salt
- some pepper, coarsely ground
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 2 hours 30 minutes; Total time approx. 2 hours 45 minutes
Pour water into a large pot. Add the onions, garlic, and spices. Heat everything, bring to a boil, and add the shanks to the water; they should be covered. Let them simmer for about 90 minutes. Shortly before the time is up, preheat the oven to 180 to 200°C. Remove the shanks from the water, drain, and roast in the oven for about an hour until crispy.
