Crispy mie noodles with egg and soy sauce

Ingredients for 1 servings:

  • 1 handful of mie noodles
  • 1 bowl of warm water
  • 2 eggs
  • some rapeseed oil
  • 1 dash of soy sauce

Instructions

Working time approx. 10 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Soak a handful of mie noodles in a bowl of warm water for 5 minutes. Heat a little rapeseed oil in a pan over high heat. Drain the water and add the noodles to the pan. Stir constantly until the noodles start to brown. Crack the eggs into the pan, add them to the pan, mix with the noodles, and fry briefly. Transfer the fried noodles to a plate and drizzle with soy sauce. This dish is also perfect for using up leftovers. Simply chop up any leftover vegetables, cheese, meat, sauces, etc. and fry them first, set aside, and then add them back to the pan with the noodles at the end.
