Crispy, oriental puff pastry roll

Ingredients for 2 servings:

  • 1 pack of puff pastry
  • 1 egg(s), beaten
  • 250 g minced meat
  • 1 bell pepper(s), red, finely diced
  • 1 onion(s), finely diced
  • 1 garlic clove(s), finely diced
  • 100 ml sour cream
  • 200 g feta cheese, finely diced
  • 3 tbsp tomato paste
  • 200 ml tomatoes, pureed
  • 2 tbsp Sriracha sauce, alternatively chili flakes
  • 150 g Gouda, grated
  • 1 tsp coriander
  • 1 tsp, leveled salt
  • 1 tsp pepper
  • 1 tsp sugar
  • 1 tbsp Italian herbs
  • 1 tbsp smoked paprika powder

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 10 minutes

Remove the puff pastry from the refrigerator. Preheat the oven to 220°C (top/bottom heat). First, brown the bell peppers in a pan. Then add the minced meat, onion, and garlic and brown. Add the tomato paste, crushed tomatoes, and Sriracha sauce. Season the mixture with all the spices and herbs and mix well. Remove the pan from the heat, add the diced feta and sour cream, and mix well. Spread the puff pastry on a baking sheet lined with baking paper and brush the edges with the beaten egg. Place the minced meat mixture in the center. Fold the puff pastry up from both sides to the center. Fold up the ends as well and brush the puff pastry with the remaining egg. Sprinkle the grated Gouda cheese over the puff pastry and then place it in the oven for 30 minutes. Serve with fresh leaf salad.
